Famous Stingray Slaw Recipe
Dressing:
- 3/4 cup vegetable oil
- 1/2 cup sugar
- 1/3 cup cider vinegar
- 2 seasoning packets of Ramen noodles (inside the noodle pack, Soy Sauce flavor)
Salad:
- 1 16 oz. package of Fresh Express Old Fashioned Coleslaw (Kroger brand is okay)
- 1 bunch scallions (chopped)
- 1 cup sunflower seeds (shelled)
Topping:
- 2 packages of Ramen noodles (please keep noodles separate from salad)
Mix the dressing and set
aside. Break Ramen noodles into small pieces and place in a zip baggie. Mix remaining salad ingredients in large
salad bowl.
Do not dress the salad or add the Ramen topping. Concession staff will add the dressing and crunchy noodles just before serving.
Stingray Pasta Salad
Salad:
- 2 lb. tri-color rotini pasta cooked
- 1 chopped red, yellow, or orange pepper
- 1 small bag baby carrots cut in rounds
- 1 container grape tomatoes sliced
- 1 small red onion chopped
- 1 small can sliced black olives
- 1 16 oz. bottle Kraft Zesty Italian dressing
Topping:
- 1 pkg. feta cheese (please keep in a separate container)
Mix together all ingredients except feta cheese. Refrigerate.
Please keep feta cheese separate so that we have a vegan option. Kraft Zesty Italian dressing is requested, as it is vegan and more flavorful than generic brands.
Spring Mix Strawberry Salad
Dressing:
- 1 cup vegetable oil
- ¾ cup sugar
- ½ cup red wine vinegar
- 2 cloves garlic, minced
- ½ tsp. salt
- ½ tsp. paprika
Salad:
- 1 lb. of spring mix
- 1 pint strawberries, sliced (I usually use more strawberries)
- ½ cup walnuts, chopped, toasted (can use more)
Topping:
- 1 cup of Monterey Jack cheese, shredded (optional, please keep in a separate container)
Dressing: Combine the dressing ingredients in a large jar. Cover tightly and shake vigorously.
Salad: Combine spring mix, strawberries, and walnuts in a large salad bowl. Do not dress the salad. The concession staff will add the dressing just before serving.
Please keep the Monterey Jack cheese separate so that the salad can be offered to vegans as well.
